Brazo de Mercedez

One of my favorite cake - "The Brazo de Mercedez". In spanish term Brazo de Mercedez is referred to us as the Arm of Mercedez - it is a log or rolled cake or jelly roll that is made from a sheet of meringue rolled around a custard filling with egg yokes & milk filling. Actually I bought this cake as a present for my sister's birthday the other day but the funny thing was: I was the first one who ate the first three slices of it (LOL!) I can't help myself because I was craving for it for the past days. (check out the recipe below from recipe horse)



Ingredients for Brazo de Mercedez:

2 can of condensed milk.

1 teaspoon of vanilla.
2 ½ cups of cake flour.
½ cup of confectioner sugar.
1 cup of sugar.
8 eggs.
Oil.

Preparation:

Beat egg whites and cream of tartar until soft peaks are formed. Gradually add sugar beating continuously until stiff peaks are formed. Pour in a lined pan heavily greased and bake when done invert in cheesecloth with confectioner sugar.

Filling

C
ombine egg yolk, condensed milk, vanilla. Cool into very low heat or in double broiler until it thickens. Remove from fire, apply the filling into baked products. Roll as in jelly roll.

What was the 2 1/2 cake flour for? It was never mentioned in your procedure,but it was on your list of ingredients.
